This recipe is a favorite. I am reminded of my friends Sheryl and Richard.
Fun memories… we played Bridge together after dinner. Richard would make soup, We’d bring a Broccoli Salad and this Pie or some times They made the Broccoli Salad. I remember Richards Black Bean Enchiladas.
Here is the recipe for the Pie:
1/2 C Medjool Dates soaked in 1/2 C water till softened and drained)
1/4 C Pure Maple Syrup
1 t Vanilla
2-3 ripe Avocados, small in size
1/2 C Carob Powder
1 t Psyllium Seed Powder
3 drops Peppermint Oil (food grade)
Fast easy store bought Gram Cracker Pie Shell.
Directions:
Everything goes into a Blender or Food Processor
1. Dates, Maple Syrup , Psyllium, Peppermint and Vanilla Process till smooth.
2. Add Mashed Avocado and Carob Process again
3. Repeat scrape down the sides and process till smooth. Add a drop of water if needed. pour into Pie Shell.
4. Chill. Serve with non dairy Whip cream if desired. Top with Raspberries
A Whole Food Pie Crust can easily be made with Walnuts, Dates and
unsweetened shredded coconut.
1 c nuts
1/2 c coconut unsweetened and shredded
3/4 c dates
process till crumbled , press into pie plate, fill and chill.
This recipe is so creative, it can be made into a mousse for dipping fruit or layered in a pretty glass or even made in a muffin tin like a tart with a fruit sauce on top!
